Things you will need for homemade Lasagna
1 lb Italian sausage
1lb sweet or mild Italian sausage
1lb ground beef
1 chopped onion
5 cloves garlic crushed
4 - 5 32 oz cans crushed tomatoes
1 6 oz can tomato paste
1 15 ½ oz jar of ricotta cheese Approx.
2 packages shredded mozzarella cheese
1 box of lasagna noodles
2 T parsley
1 T basil
1 T oregano
3 T sugar
1 tsp salt
1 egg
2 T parsley
Directions remove any casing from sausage if you are unable to find just a pound of ground sausage. In a very large pan over medium heat add a small amount of olive oil and saute sausage and ground beef until brown chopping up into very small pieces while cooking. Drain most of the fat then add onion and garlic and cook a bit until onion is tender. Add spices then crushed tomatoes and tomato paste. Simmer over very low heat for about 2 hours. Cook lasagna noodles according to directions. Rinse in cold water to stop the cooking process and layout paper towels to dry them off. Mixed together ricotta cheese, one egg and 2 T parsley.
This recipe will make three large lasagna’s but you can make them into any size and freeze extra to cook at a later date. I start with a small amount of sauce, just to coat the bottom of the pan then put one layer of noodles on top. spread a very small amount of ricotta cheese mixture on top of the noodles. Then add one layer of sliced mozzarella cheese. Top with a layer of sauce. Then repeat these layers two more times. For the last layer, it is just one layer of noodles, topped with sauce and then topped with shredded mozzarella. ( A total of four layers of noodles and just three layers of Ricotta and mozzarella combo ). Cover with foil.
At this point you can freeze to cook at a later date or bake in a 375 degree oven for 30 minutes, uncover and cook for an additional 25 - 30 minutes until hot and cheese has melted on top and has started to brown.
When cooking frozen it takes much longer to heat up. You need to cook for about 1 hour and then uncover to continue cooking the rest of the way. Everything is pre-cooked so it's just about getting it on Frozen and hot!
